kicked up southern goodness



I know its been so long since i last posted, But i have a tween son now and he is.... well anyways... this is our Shrimp Bonaparte. Its in the same Corn Maux Choux, with grilled serrano ham wrapped around cives and then three lightly grilled shrimp place so lovingly around the ham.. the maux choux has corn, bacon, scallions and heavy cream... just so plain and simple flavors that are delightful... so introducing... The Bonaparte....

mothers day and other disasters


Now as a mother and cook i have learned to take criticism and all in the workplace like a champ and rarely bat an eye. But this week i have gotten blown out of the water by comments and sometimes i have actually visualized strangling my chef as he speaks..
He has given us the task of preparing menu item that he considers WORTHY of his approval.. hmphf!! so this was my first shot out of the gate... It it polenta mixed with a blue cheese and chive cream, then i pan fried it til crispy, it is topped with a piece of steak, and red onions reduced in balsamic, red wine and sugar. It is a gluten free kicked up roast beef sandwich. it wa creamy and delicious... I was very pleased while watching jenny eat it. she had a look of utter enjoyment in her eye and i knew i had hit it.
Then....WHAMMO ...chef, who only heard about the dish but did not see...proceeded to critique it and i was just so...arghh.... will post after a few mimosa's...happy mothers day to me. WOMAN WHO BEHAVE RARELY MAKE HISTORY!!!!! UNGIRDLED WOMEN RULE!!

when it all comes together

Sometimes in the culinary world you get the chance to just freelance and experiment when you are left to browse and peruse the kitchen alone, so this is cron machu..cooked in bacon, scallions, garlic, heavy cream and s&p..then i grilled some scallops and drizzled a little cumin oil on the top..very earthy and comforting ..yum
